September 1, 2013. 1 Peel 10-12 small eggplants. 2 Lightly spray 9×9 pan with Olive Oil Spray. 3 Put eggplant in bottom of pan. 4 Layer green onion, tomatoes, shredded mozzarella cheese, and croutons. 5 Bake at 350 for 35 minutes. The kale soup was also really good! It included kale, tomatoes, sweet potatoes, beans (I used garbanzo beans), carrots, onions, and I used basil instead of parsley.
