I am making it with some friends today so I thought I would put it up here to share with you and as an easy way to have it ready for my friends to take home with them. 2 medium sized firm eggplants, peeled, sliced, salted, (do this first) rinsed and then diced. 2 medium onions, thinly sliced. 2 cloves of garlic, finely minced.

All the water from Rule has breached the dikes and have flooded the field. Will set the cotton back some and will drown it out if we do not get a break in the weather. Alot of water in this county.
