Chicken and Wild Rice Soup. 1 cup uncooked wild rice. 2 garlic cloves, minced. 3 cups chicken broth. 5 cubed peeled red potatoes. 10 slices Cheddar Kraft singles. 1/2 t freshly ground black pepper. Boil 3 cups water. Add rice and bring back to a boil; reduce heat and simmer until cooked. Heat oven to 425. Coat chicken with olive oil and season with salt and pepper. Roast about 9 minutes on each side. Let rest.

Wednesday, February 29, 2012. Ruby is 4 pounds 10 ounces today. Up 0.6 ounces from yesterday. Tuesday, February 28, 2012. Ruby is 4 pounds 10 ounces today. She has been doing really well since surgery. We extubated her on Sunday and by Sunday night we weaned her off the nasal cannula and on to room air. Yesterday she pooped the normal way (our nurse saved it for me) and the surgeon said to start feeding her. I wonder what we're going to do today. Sunday, February 26, 2012. Wednesday, March 20, 2013. We had a follow up visit today with a developmental therapist that helped us while Ruby was still in the hospital. We're happy to report all gold stars! Ruby is meeting all the developmental milestones for her adjusted age. She weighs an ounce shy of 17 pounds. Sunday, January 29, 2012. We made some good progress today. We get 3 hours off the CPAP mask and 6 hours on. Ruby did have a bit of a try without the CPAP already and she wasn't quite ready to do it all on her own at that point. We really love it when she has the mask off and we can see all of her chubby face. Before I would have said it is crazy to describe a 3 and a half pound baby as fat but look at those cheeks.
