Throw in some diced avocados right before serving - yum! 1/2 small red onion, peeled and quartered. 1/2 c fresh cilantro leaves. 1/2 to a whole jalapeño seeded and ribs removed. 2 T lime juice. 2 garlic cloves, peeled. 1 (28-oz) can fire-roasted diced tomatoes. It's great with a quick salad of spinach, fresh strawberries, red onions, and feta (and candied sliced almonds or pecans). 15 t ground mustard. 1/3 c red wine vinegar. 1/8 c chopped white onion. 1 c canola oil. 1 t poppy seeds. On another healthy kick, I actually made something that we liked. It tasted so fresh and good and a great snack alternative for the week. Combining with hummus with it is good too. 1 cup uncooked quinoa (or 3 cups cooked). 1 (15-ounce) can black beans (or 1.5 cups cooked), drained and rinsed. 15 cups cilantro, finely chopped. 4 green onions, chopped.

This was quick, tasty, and perfect for a summer night. Yum! 2 c cooked wild rice (about 1/2 c raw). 2 large sweet potatoes, peeled and diced (3-4 c). 1 T olive oil. 1 T chili powder. Salt and pepper to taste. 1/2 c cashew pieces (or whatever nuts on hand). 1/4 c freshly squeezed lemon juice (2 lemons). Zest of the 2 lemons. 2 t agave nectar.
