Eating Well in the Northwest: January 2012

http://www.eatingnw.com/2012_01_01_archive.html

Eating Well in the Northwest. Gastro-geek adventures in the great Northwest. Wednesday, January 11, 2012. Running with the Bull. We ended 2011 on a high note, with a visit to Portland’s Bull Run Distillery. We arrived during a lull and had a chance to chat with co-founder Patrick Bernards, and talked him into stepping next door and showing off their two behemoth 800 gallon, custom built stainless stills and the tuns of rum currently in fermentation. Medoyeff Vodka by Lee Medoff of Bull Run. Point Rider a...

Eating Well in the Northwest: Port in a Storm

http://www.eatingnw.com/2010/10/port-in-storm.html

Eating Well in the Northwest. Gastro-geek adventures in the great Northwest. Tuesday, October 26, 2010. Port in a Storm. The first winter storm ripped through this weekend, sucking massive amounts of moisture from a typhoon far out in the Pacific. The deluge quickly washed away thoughts of any outdoor activities, so we decided to mix and bottle a batch of Huckleberry wine. Betsy's alchemy, getting the proportions of wine, cognac and syrup just right. Once the bottles were full, we added a sealing cap.

Eating Well in the Northwest: November 2010

Eating Well in the Northwest. Gastro-geek adventures in the great Northwest. Sunday, November 21, 2010. Grifola Frondosa, Maitake, King of Mushrooms, Hen of the Woods, Dancing Mushroom, Cloud Mushroom or in a word - Yum. I love maitakes. They are not native in our area, and are hard to find in the grocery store, so I get my fix from Rainforest Mushroom. PS, I also found some awesome unpasturized cider at the farmers market that has started the transformation into what I hope will be a great hard cider.

Eating Well in the Northwest. Gastro-geek adventures in the great Northwest. Friday, December 16, 2011. Blue Mounain Estate Winesap Cider. I was in Portland's Brooklyn neighborhood yesterday and stopped by Bushwhacker cider pub. It was a quiet on a weekday afternoon and bartender Katie walked me through some of the selections and I walked away with a bottle of Oregon's own Blue Mountain Cider's. It was great for sipping, and made a wonderful accompaniment to homemade chicken pot pie. Cider Blogs and Sites.

Friday, December 10, 2010. My children just LOVE spaghetti, or actually anything with red sauce for that matter,. So this of course is their most requested dish. On occasion we make it a group effort by having them make the pasta. It gives them something to do while I work on the sauce ;-). Not only that, but, what kid doesn't like playing with dough? This recipe is fun, easy and very very family friendly*. 1 1/4 cups flour (whole wheat can be substituted for 1/2 for that added nutrition! Now THAT"S the ...

Friday, December 31, 2010. The Orange Blossom Special. It's New Year's Eve. Having had my fill of both 2010 and drunken New Year's celebrations, I am staying home tonight. A dear old friend is in town and will be stopping over for a visit with his new wife and I am looking forward to a calm and relaxing evening! When Grant first mentioned that he was coming to town, I (half-jokingly at the time) said "Since I know that you're coming I can bake a cake! Preheat your oven to 350°. Grease and lightl...1/2 c ...

Sunday, November 28, 2010. The great thing about roasting pumpkin seeds is that you have a world of flavor combinations at your fingertips. If you like spicy, make them spicy. If you like garlic, pour it on. You could even make them sweet, if you wanted to! When I actually make the seeds, I never measure. Each time I make them, I have a different amount of seeds so there is no hard and fast rule here. The measurements I give below are based on a pan whose bottom is completely covered in seeds. As they say, "Life happens," and sometimes we get called away. My time in the kitchen has been drastically reduced as of late, due to all of my attention being focused on other things. Now, upon their completion, I find myself a bit peckish and in the mood for something new. The answer - not hard at if you have a food processor! Making falafel takes a littl...

Sunday, September 18, 2011. If I could fill my basement shelves with delicious sweet jammy goodness, I would! So far this year, I have made strawberry, marionberry and raspberry jams. Later this week, I will make peach jam. Today, I'm going to make blueberry. Did I mention that I love jam? Even with all the jam I've made, I'm still experimenting and every batch of jam is a new adventure. I still haven't gotten it mastered and my pectin still gives me fits on occasion. Today I will boldly try again. This ...
