Whatever the name suggests, it is a nice site and a must-read for those of you (non-engineers too) who are interested in serious cooking. To make it my Mom’s way, you need one ingredient that is found only in West Bengal: it is called Randhuni. The spice is an element of Panch Foron (Paanch Puran), but there it is often replaced by black mustard. If you cannot get hold of Randhuni, you can use Paanch Foron, and I would give recipes for both. Try it, try it, try it. Only then you will know what I am talking about.

I would also like to bring to the reader’s attention that unlike what Delhiwallahs think, Palak is not the only way to turn food green. You need: Chicken (in whatever quantity), coriander leaves (one bunch), green chillies (about five), Kasuri methi leaves note that all of these are green. 14 January, 2006.
