My son and I love Mexican and I had been wanting some enchiladas. My mom is not an "international" eater. She likes plain old fashioned Southern food but she agreed to try them. SHOCK she enjoyed them! For my cooking. Gotta love our elderly folks. Mix: 1 TBSP cornstarch. 1 tsp smoked paprika. 1 tsp chili powder. 4 small sweet salad peppers.
