Life at the Lodge. Straight from Parkway Kennels. December 2, 2015. I don’t mean Buddha in religious terms, but in dog terms. Meet Buddha, a regular at Parkway Pet Lodge. He’s a Pit Bull Terrier by breed, but a giant teddy bear by personality. Every day, employees like me give ten to fifteen minute playtimes to each dog at the lodge, and Buddha happens to be one of my favorite dogs to have playtime with. Why, you ask? 8230;He makes funny faces! I think his smile is contagious. I hope you think so, too.

Bacon, Quinoa and Kale Stuffed Acorn Squash. 1 large butternut squash. 1-2 teaspoons olive oil. 12oz of thick cut bacon, cut into small pieces. 2-3 cups loosely packed kale, chopped small. 2 cups cooked red quinoa. 1/4 tsp ground nutmeg. 1/2 pound extra sharp white cheddar cheese, shredded. 1-2 teaspoons dried thyme.
