Monday, January 9, 2012. Easy and So worth it! Crock Pot chicken Tortilla Soup. I found this recipe on Pinterest awhile a go and finally got around to making it. WOW is it easy and sooooooo goood! 1 can Ro-Tel (chili fixins). 1 can Kidney beans. 1/4 cup chopped onion. 1 can low sodium chicken stock. Chop onion and mix with all other ingredients except sour cream, shredded cheese, and chips into Crock pot. Cook on high 6-7 hours or cook on low 8-9 hours. Courtesy of jonandjenmiller.blogspot.com.
