Meals & Mayhem: April 2015

http://www.mealsandmayhem.blogspot.com/2015_04_01_archive.html

The adventures and misadventures of putting (usually) healthy and (almost always) easy food on the table for our family of six. Also referred to as: Chaos: Its Whats For Dinner. This is a rare recipe that got rave reviews from *J*. He ate two of them and asked for a third, and the following night he was even excited about leftovers. The others liked them, too, but I barely paid attention to their reactions because I was busy picking my jaw up off the floor. 3 Tablespoons brown sugar. 1 pound ground beef.

Meals & Mayhem: May 2015

The adventures and misadventures of putting (usually) healthy and (almost always) easy food on the table for our family of six. Also referred to as: Chaos: Its Whats For Dinner. Slow Cooker Chicken and Black Bean Soup. This was a huge hit, which surprised me because I've made many variations on Mexican/chicken/bean soups before. Before it was even served, *J* told me that it looked delicious. I served it with everyone's favorite cornbread. 3 or 4 boneless, skinless chicken breasts [I cut each in half].

The adventures and misadventures of putting (usually) healthy and (almost always) easy food on the table for our family of six. Also referred to as: Chaos: Its Whats For Dinner. Quinoa Pilaf with Apples and Cranberries. I thought this was really good, though reactions from the rest of the family was split. Since it was easy to make and held up well over several days, this will be a contender for something like Thanksgiving. The apples, cranberry, and pecans give a autumnal vibe. 1 and 1/2 cups red quinoa.

Meals & Mayhem: Southwest Pasta with Beans & Corn

The adventures and misadventures of putting (usually) healthy and (almost always) easy food on the table for our family of six. Also referred to as: Chaos: Its Whats For Dinner. Southwest Pasta with Beans and Corn. The seasonings are purely to-taste.any amounts or substitutions are possible. Next time I'll probably go even easier and just do a few shakes of the McCormick Southwestern blend. 1/2 cup mayonnaise [I used light]. 1/8 teaspoon smoked paprika. 1/8 teaspoon garlic powder. 2 cups frozen corn.

Celebrating Life and Motherhood. How to prepare the recipes. About me and this site. Sunday, September 30, 2012. Fat free sweet potato chips. These are SO delicious and good for you at the same time. That's pretty good for chips don't you think? What you do is you spray a cookie sheet with a thin coat of Pam. Then you peel and slice a sweet potato super thinly. I used a veggie slicer to do this because slicing them that thin would be pretty much impossible by hand. Sunday, September 30, 2012. Chocolate p...

Celebrating Life and Motherhood. How to prepare the recipes. About me and this site. Wednesday, August 22, 2012. I am learning that the more fresh uncooked foods I incorporate the better I feel. Same with having a sweet tooth. The more fresh foods you incorporate, while cutting out refined sugars. The less you crave sweets. BUT sometimes the body does truly need a bit of sugar. The trick is then to get these sugars from sources that won't make you crave the junky kind! 1 zucchini peeled and chopped.
