I recognized last weekend that stepping out side being hopeful that a coat was not necessary was no longer a viable possibility. A couple of weeks ago we made a weekend trip up to NYC. Taste of Home Magazine: Charlene Griffin]. 1-1/2 lbs. ground hamburger. 1/2 of a medium onion (any kind that you like- I used red and some green onion). 1/2 tsp minced garlic (if you don't have this just use garlic powder). 1 (10 oz) can enchilada sauce (medium is my preference). 1/2 cup salsa (I used Pace Mild - it's our favorite). 1-1/2 cups cottage cheese (I used 1%). 8 flour tortillas (I think I used less). Add 1/2 cup salsa.

We're Empty Nesters

Saturday, October 22, 2011. In mid September, we took off for a 3 week vacation. We spent 16 days visiting 6 National Parks, one in Nevada and the rest in Utah.We traveled over 2600 miles with our 5th wheel in tow, hiked almost 50 miles of beautiful landscapes and did a little bike riding too! The last 5 days we spent in Boulder City / Henderson Nevada visiting with the kids and grand kids. Looking down at the White Rim Trail. 65279;The Famous Mesa Arch.
