It was delicious, healthy, and beautiful so of course I have to post it here. 5 T fresh lime juice. 1 garlic clove, minced. 1/4 c cilantro, finely chopped. 1 t ground cumin. 1/3 c olive oil. 1/2 t black pepper, or to taste. 1 1/2 c quinoa (measurement before cooking). 1 can black beans, drained. 1 can corn kernels. 1 avocado, chopped. 1/4 c fresh cilantro, chopped.
