I'm using eye of round in this picture, but I also like london broil and top round. Dip each slice into apple cider vinegar and pat dry. This helps to cure and flavor the meat. The Biltong Box | Make Biltong

How the box works. These pictures show a 800mm(h) x 300mm(w) box. Boxes are made with holes at the top and bottom of the door to allow good air circulation for drying the meat. As an option holes can also be made in the sides or the back of the box. Hooks are made from Stainless Steel Wire. All parts of the box are removable for easy cleaning. The box is made from 18mm MDF (untreated). Hinges are sprung to keep the box securly closed. This is the small box, 600mm(h) x 300mm(w). Take a piece of Sliverside.
