The Crofter's Kitchen. On February 6, 2010. 200g smoked Mackerel fillets. 3 tablespoons double cream and a little more. 3 heaped tablespoons of grated Parmesan cheese and a little more. Thick doorstep slices of bread. Peel skin from fillets and flake in a bowl with a fork. Stir in cream, parmesan and finely chopped chives with a grinding of black pepper. Toast the bread lightly and top with the mixture. Drizzle a little more double cream over the toast and add a little more parmesan. 9654; One Response.

Put a knob of butter and a glug of oil in the upturned cup. Grind a little pepper and salt, and grill, on a low heat, constantly buttering and oiling till you have a gold, brown and black mushroom.
