Very Simple Blueberry Muffins. 1 1/2 cups flour. 2 tsp baking powder. 1 cup blueberries – if using frozen, don’t thaw them! Turbinado sugar (“sugar in the raw”) for sprinkling tops, optional. Preheat oven to 400 degrees. Mix together the dry ingredients, then whisk in the milk and oil. Fold in the blueberries. This is a tangy, dense, moist, lemony loaf… and it’s low fat, with about 5g fat per serving. I find that a tablespoon of cornstarch really improves the texture of low-fat quick breads, but it can be omitted.
