Sunday, September 02, 2007. We set aside Sunday of Labor Day weekend to bottle, the day after our trek to Palo Alto to watch the mighty Bruins defeat Stanford. Jon, our winemaker neighbor, promised to help oversee the low-tech operation. I man the corking station, jamming down a long lever that resembles a bladeless paper cutter. This drives a synthetic cork into a secured bottle. We stacked the boxes in the living room temporarily, posing for photos. Posted by GirlBee at 11:23 PM.

Wednesday, August 01, 2007. Today we thieved a couple of glasses, now that the wine had time to relax after the tumultuous racking we put it through, tubes spraying it from barrel to bin and back again. Now we could taste what our final wine might be like, touch its future. The barrel had evaporated more than we expected, a bit troubling. Tuesday, November 21, 2006. It started me thinking about my favorite wine (probably because my blog entry was overdue and I was captive and agendaless). If I had to choose, which varietal would I have Daniel record? Friday, July 06, 2007. We decided that double-racking would make our wine as uncloudy as possible, a measure to ensure thoughtful craftsmanship. We followed the same procedure as the first go-round. As it turned out, there was practically no sediment whatsoever, though we poured out perhaps an inch or so for good measure. This left crawl space in our barrel that needed to be filled in. The drywall guys got started early this morning and by this evening have enclosed the winery space. The pictures below show the dramatic change and also illustrate the ceiling fire barrier as we've got one layer installed along with the metal spacers. Tomorrow will see the final ceiling layer installed and then they'll start plastering! It actually looks like a winery room!
