Mysteriously, this is much better cold than hot. 12oz / 340g mixed fruit. 8oz / 225g brown sugar. 1 mug cold tea. 1T marmalade (I really like Rose’s lime marmalade, but it’s all good). 12oz / 340g plain flour 1t baking powder (or 12oz/340g self raising flour). Soak the mixed fruit and sugar overnight in a mug of cold tea.

But as (a) I don’t know what is Tunisian about it, and (b) I always want to eat lemons rather than oranges, the recipe has been slightly mucked with. 45g slightly stale bread or cake crumbs – I use panko crumbs because I’m that lazy. 100g freshly ground almonds (or not freshly ground, as the case may be. Still seems fine to me). 1 t baking powder.
