Pasta bake – veggingit
https://veggingit.wordpress.com/2016/11/13/pasta-bake
November 13, 2016. November 13, 2016. My mum is a great cook so it’s hardly surprising that I was a bit chubby growing up. Mum makes mean meals and has instilled in me a real love for food and cooking. Oh, I remember that creamy sauce, the little shells of pasta and the melted cheese on top. Put it this way: there was. I used pumpkin for the sauce as I. Serves 4-6, depending on how greedy you are. Takes about an hour and a half to cook. One large pumpkin or butternut squash (around 350g). Now, spread the...
Curry in a hurry – veggingit
https://veggingit.wordpress.com/2016/05/03/curry-in-a-hurry
Curry in a hurry. May 3, 2016. May 4, 2016. It’s official: vegans live for longer. That’s what a recent BBC documentary says anyway and I’m going with it. How to Stay Young. Angela Rippon and Dr Chris van Tulleken turn to science to discover the secret of a long and healthy life and discover that (surprise, surprise) stress is bad for us but that dogs and dancing do us the world of good. In the programme, Angela and Dr Chris (who’s quite a dish. Why not give this quick and simple curry a try? It’ll take ...
Comfort food: part three – veggingit
https://veggingit.wordpress.com/2016/10/20/comfort-food-part-three
Comfort food: part three. October 20, 2016. October 24, 2016. I think I’m coming down with a cold. It’s that time of year when everyone at the office is snuffling and sneezing and now I’m feeling a bit under the weather. This recipe takes no time at all to make, is s(o)uper easy and uses just three ingredients: tomatoes, onions and olive oil. The best bit is that there is minimal chopping and you can even use tinned tomatoes if you’re really rushed for time. Tomato soup with butter bean spread on toast.

Comfort food: part two. October 17, 2016. January 4, 2017. What a difference a day makes. Yesterday, I was snoozing in the Spanish sun. Today, I’ve listened to the rain and drunk a lot of tea. Ratatouille is incredibly versatile. Eat it with bread, pasta, rice, couscous, vegetables or just on its own and if you want to bulk it up, serve with some chickpeas or lentils on the side. Serve with green beans and bread…. 2 red or white onions. 2 cloves of garlic. 3 red or yellow peppers. A bunch of fresh basil.

Vegging for Health
Wednesday, September 19, 2012. 150] A Week (more like two) In Review. On Labor Day, I rode up to DFW with my dad and baby sister. We were meeting up with my sister (and her little family). To cure all the crankiness, we stopped for lunch at Chili's before heading back to Wichita Falls. Later in the week, a friend of mine sent me this with the message, "Quick! Before your mother finds you a zombie! I'm about 102% sure I have found a non-serial killer. Success! It's unfortunate that this happened on such a...

The Vegging Gardener
Suburban Block vs One time-poor (and maybe a little lazy) veggie gardener. Sunday, December 1, 2013. How many beans can you grow in two. Square metres of soil? I couldn't tell you yet - I haven't finished harvesting. Wednesday, November 13, 2013. A bumper crop of wax paper bags. I tend to only grow things that are edible or useful, and never just because they are sightly. Nothing probably better illustrates all of these points than my wax-paper bag trees, and this season I'm getting a bumper crop. Light ...

vegging in chungju
Being a vegetarian in korea. living in chungju. teaching university. Sep 17, 2012. First week(s) of school. And then there was also the awesome moment when I found out that instead of using my office phone number, they opted to just post my personal phone number to every single student. So yeah, not the most stellar start of the semester. That's what makgeolli is good for. But my teaching schedule has enabled me to avoid a welcoming/farewell party of awkwardness, so I can't say it's all bad. And a street...

Vegging Out DC
September 10, 2014. May 2, 2014. Although we have lived in D.C. for a while, we have very few “go-to” spots. The restaurant that tops our list is D.C. Coast. On its face, D.C. Coast doesn’t seem like it would be a strong contender for the top “go-to” for a vegetarian couple that (self-delusionally) views itself as (kind of) young and (kind of) hip. It is a seafood restaurant that has been around a while and caters largely to the downtown lunch crowd. September 10, 2014. April 6, 2014. K: Ummm…isn&#...

Vegging Out
A coworker spent two weeks in Okinawa and brought us goodies. Mine was this incredibly fun Matcha Kit Kat:. And the candy inside:. I really enjoyed this treat! The aftertaste was like buttercream frosting — that’s the best comparison I can make. I didn’t notice a green tea flavor at all, thanks to all the sugar, but I would definitely sample one again. She brought a beautiful tin box of these little guys to my boss, who has been generous enough to share with all of us:. Didn’t they turn out cute? These a...
