Then there are days.where it doesn't matter what I do.it just sits there.leaden. These are my tips for working with yeast and gluten free flours:. Use double the amount of yeast called for in a bread recipe. The yeast rises better when it has a sugar to feed it. Do all the shaping first and then allow the dough to rise.
