Made with English Dark Mild or any other Dark English style beer. Brined for a few days then oven roasted. Bacon Wrapped Pork Loin. Oven Roasted with Potatoes cooked in the drippings and pan gravy. Same wort as BDSA 2011, used dregs from Maredsous Bruin. Belgian Dark Strong 2011. 1089, Blend of Achouffe/Rochefort yeasts, complex malt bill. A few changes: lower IBU, WLP575 yeast, real D2 syrup, and softer water. BPA wort with dregs from Achouffe - nice big Belgian phenols. BPA wort with dregs from Rochefort 8 - nice mild fruitiness. I made a pretty traditional grist and tried the White Labs Yeast Blend WLP575. A true West Coast hop bomb. Brewed for my Sister's Graduation. Fantome Noel Dark Saison.

After hitting the pH ( another note on adjusting with acid is that its good to add incrementally as once the buffering capacity is reached the pH will drop quickly.
