While I was in baking school we used a recipe for carrot cake that quickly became my favorite. It has buttermilk in it and is quite moist. The original recipe calls for walnuts but we chose to exclude them. I was pretty nervous about making a cake that was big enough so I went with 14-10-6″ tiers.
