As someone whose been making the change from vegetarian to vegan, I’ve personally found breakfasts very challenging! Cafés seem to love offering eggs or yoghurt and muesli as a vegetarian alternative, however, vegan options seem to not stretch as far as avocado on toast. I’ve heard of smashed tofu as an alternative to egg but only until recently tried it myself and I love it! Pinch of chilli flakes.
