In the Kitchen

Saturday, April 14, 2012. I love beans. I wanted to learn how to make my own refried beans, so I did some googling and tried a recipe. I'll never eat refried beans from a can again! You can make a large batch of these and freeze them for later. 1 onion, peeled and halved. 3 cups dry pinto beans, rinsed. 1/2 jalapeno, seeded and chopped (don't get too crazy about chopping this too small- these beans cook all day and the vegetables pretty much melt into them). 2 Tb garlic, minced. 1-2 tsp black pepper.

In the Kitchen: Roasted Tomatillo Salsa

http://www.inthekitchenwithkristy.blogspot.com/2012/03/roasted-tomatillo-salsa.html

Wednesday, March 21, 2012. I'm more of a red salsa kind of girl, but I had a bunch of tomatillos to use. So I put them to good use in a tasty tomatillo salsa. 1-1/2 lb tomatillos, shucked and rinsed. 1/2 c chopped onion. 1/2 c cilantro (I actually use cilantro in some recipes! 1 Tb lime juice. 2 jalapeno or serrano peppers, seeded and chopped. Cut tomatillos in half and place on baking sheet. Roast under broiler for 5-7 minutes to lightly blacken the skin. Subscribe to: Post Comments (Atom).

In the Kitchen: Menu Monday--on Saturday

http://www.inthekitchenwithkristy.blogspot.com/2012/03/menu-monday-on-saturday.html

Saturday, March 17, 2012. Menu Monday- on Saturday. I know, it's supposed to be Menu Monday. But I get my bountiful basket. Are you sick of hearing about it yet? On Saturdays, so that's become my new menu planning day. See, I plan all of our meals around what we get in the basket each week, that way I'm making more vegetable-based things, rather than trying to fit the produce in by chance. Make sense? This week we got:. To work with this week. That's a lot! Cabbage, onions, carrots). Friday: stir-fry or ...

In the Kitchen: Simple Pico & Guacamole

http://www.inthekitchenwithkristy.blogspot.com/2012/03/simple-pico-guacamole.html

Thursday, March 22, 2012. Simple Pico and Guacamole. I love, love, love salsa. And I love, love, love pico. And, after many, many, many years of hating avocados, have developed a deep and abiding love for guacamole. There are a million different guacamole recipes out there- and even some guacamole seasoning packets you can buy at the store. I've tried a few recipes over the years, finally settling on a favorite last winter. And since then, it's been my go-to recipe! Notice I didn't give any measurements?

Tuesday, June 21, 2011. Pasta with Beet Greens and Raisins. Sounds weird, right? We've started getting our weekly CSA box and it comes with all sorts of new treasures. Luckily, our CSA owners have a blog where they post recipes to try with the produce available in the weekly box. Thank goodness! We tried this one tonight and it was surprisingly tasty. I say surprisingly because there are so few ingredients and such a strange assortment of tastes! 8 oz penne noodles, uncooked. 1-1/2 Tb olive oil. I'm a ve...

http://jcgriffin.blogspot.com/2011/12/happy-birthday-to-you.html

Just a glimpse into our crazy and wonderful life together! Saturday, December 3, 2011. Happy birthday to you! Josh is the greatest guy ever (in my opinion) and somehow he thinks that it is so wonderful to be a grump. Our niece, Hannah, even gave him and Oscar the Grouch shirt that he LOVES! So, when his birthday rolled around, he wanted an Oscar cake. This is what I created. It was AWESOME (if I do say so myself)! December 3, 2011 at 11:12 PM. I am sooo impressed with this cake! My Life in a nut shell: November 2014

http://leannslife.blogspot.com/2014_11_01_archive.html

Saturday, November 15, 2014. Roman had his last Cub Scout Pinewood Derby last week. On top of Halloween and everything else, I was looking for the easy way out. So we bought a pre-cut car. Roman picked the Bat Mobile. It looked pretty cool. We thought we would try some of the tricks that the guy on this video. It is kind of hard to believe that we are only 6 months away from being out of Cub Scouts for awhile. Only a year and a half and this kid will be in Young Men's. CRAZY! Thursday, November 13, 2014.

My Life in a nut shell: March 2015

http://leannslife.blogspot.com/2015_03_01_archive.html

Saturday, March 28, 2015. The day after the cake auction I planned a little camping trip with my family down in Goblin Valley. This is where we are taking the girls for Girls Camp and I really wanted to check it out as I had never been. The kids didn't have school on Friday so I figured this would be the perfect opportunity. I packed all morning on Thursday and we left as soon as the kids got home from school. What a beautiful campground! With the sun down however, it got really chilly. The next morning ...

Saturday, January 31, 2015. Amazing Race YM/YW Activity. So, the Laurels were in charge of introducing the theme for the year for our combined youth activity. And since I'm in charge of the Laurels. The theme this year is "Oh ye that embark in the service of God, see that ye serve him with all your heart, might, mind and strength." (D&C 4:2). Needless to say, I've had a lot of activities that involve a "travel" vibe in my brain for the last couple of months having that word "embark" in there and all.

My Life in a nut shell: May 2015

http://leannslife.blogspot.com/2015_05_01_archive.html

Sunday, May 31, 2015. Ezra had his end of year play. So cute! Kindergarteners are just SO cute. A lot of work, I'm sure. My hat goes off to all kindergarten teachers, but those kids are adorable! Ezra was Little Babaji in his play. It's super quiet because the kids are just SO quiet but if you turn it up, you might be able to hear him say all his lines. He had a bunch but he memorized them without much effort. After the plays, they sang a few songs. She's tall too, which makes her even better. :). And th...

Wednesday, October 29, 2014. Another Quick Hotel Night and Temple tour. We stayed the night in our favorite SLC hotel again back in September. It sure is a relaxing way to spend a weekend. Just watching some garbage T.V., swimming, not cooking, etc. On our way home we stopped by three more temples:. We sure are lucky to live so close to so many beautiful temples! Sunday, October 26, 2014. Like I mentioned a few times before, Roman played flag football again this fall. He was on the Seahawks team. The kid...

I have a lot to learn going to self-hosted, so bear with me for the next few months at the new site HERE. I have specifically kept the theme the same to minimize the transfer headaches for the lovely and uber-talented, eDee, over at StuckAtHomeMom.com. So it really won’t look that much different for now. They are often called “angels wings” since they resemble that shape. But, at the end of the day, they are deliciously light and airy pieces of fried dough, covered with powdered sugar. I believe every culture has their own version, but to me, the chrusciki will always be the benchmark. Makes about 7 dozen cookies.
