I rarely make quiches but thought it would be a good way to mix up our zucchini usage and use up some crabmeat we had. This was a pretty made up recipe just using numerous quiche recipes as guides. 1- 9" pie crust. 1 large zucchini/summer squash, cut into 1" pieces, drained as much as possible. 1 tomato, cut into 1" pieces, juice removed.

Monday, February 4, 2008. So I had an idea for using the Oreo Truffle Recipe. I’ve shown before and turning those into little tiny footballs. Well, let’s just say the idea was better than the execution. I ended up doing two batches because I was disappointed with how the first one came out. Take a look. Follow the recipe for Oreo Truffles. Don’t do it this way. I shaped the mixture into little footballs. Dipped them once in chocolate bark, let them dry. Dipped the ends in white chocolate, let them dry.

Saturday, April 14, 2012. I love beans. I wanted to learn how to make my own refried beans, so I did some googling and tried a recipe. I'll never eat refried beans from a can again! You can make a large batch of these and freeze them for later. 1 onion, peeled and halved. 3 cups dry pinto beans, rinsed. 1/2 jalapeno, seeded and chopped (don't get too crazy about chopping this too small- these beans cook all day and the vegetables pretty much melt into them). 2 Tb garlic, minced. 1-2 tsp black pepper.

They are often called “angels wings” since they resemble that shape. But, at the end of the day, they are deliciously light and airy pieces of fried dough, covered with powdered sugar. I believe every culture has their own version, but to me, the chrusciki will always be the benchmark. Makes about 7 dozen cookies.

And it gives me a chance to cook for others. . This month, I decided to cook a meal that was very simple for everyone. I made my basil pesto.
